THE EXPERIENCE:

Discover a rich coffee experience with sweet cacao nibs, caramel, and brown sugar notes. This blend offers a vibrant combination of clementine, citric, and lactic acidity, providing a refreshing twist. Enjoy a creamy body with hints of honey, lemon, and orange, creating a delightful and nuanced profile. 

THE CHALLENGE:

Elevate the fruity, citrus, and sweet notes of the cherished Castillo variety renowned for its exceptional sweetness. This unique approach incorporates cherry juice in fermentation, harnessing bacteria for a quicker malolactic process, intensifying the natural fruity and sweet qualities. 

PROCESS:

  1. Cherries are handpicked, then floated and sorted by density to isolate the densest cherries, also serving to eliminate bacteria.
  2. Selection involves meticulous handpicking, focusing on 70% ripe, 20% overripe, and 10% half-ripe cherries, identified by their red color. 
  3. The cherry mass begins its journey in a tank, initiating aerobic fermentation and an acetic process that infuses the coffee with its fruity aroma and taste. Daily extraction of cherry juice occurs and is stored separately. 
  4. After 72 hours, cherries undergo depulping and are placed in sealed stainless steel fermenters with a gas valve for a week, initiating anaerobic processing to stimulate malolactic fermentation and yeast growth. Extracted cherry juice is reintroduced into the mass during this stage. 
  5. The mass is then spread out on sunbed driers for 2-3 weeks until the moisture content decreases to under 11%. 
  6. Finally, the coffee, stored in Grain Pro bags with parchment, matures for a minimum of two weeks before milling and exportation.
