THE EXPERIENCE:

Embark on a sensory journey with our signature coffee, a captivating blend of black cherry and chocolate. Discover the sweet nuances of berry and grapes, elegantly mingling with the comforting notes of milk chocolate. Delight in the subtle hints of cocoa and vanilla, heightened by a touch of spices. This coffee boasts a satisfying body and a mild, lingering aftertaste for an unparalleled tasting experience.

THE CHALLENGE:

We wanted to create a Funky, creamy, super fruity and winey coffee, but at the same time an authentic and unique Black coffee, different from the usual tastes from the market.

PROCESS:

The aim was to create a coffee featuring exceptionally sweet, fruity notes reminiscent of berries and prunes. This black honey stands out in Central America for its unique process, involving the reuse of coffee juice from the initial fermentation to expedite the pulping phase. Markets appreciate its distinctive funky notes from prolonged fermentation or the sweet hints of white chocolate. 
  1. Cherries are meticulously handpicked and separated by density to ensure only the densest ones are chosen, with 70% ripe, 20% overripe, and 10% half-ripe cherries selected. 
  2. The mass undergoes aerobic fermentation and acetic processes in a tank, producing the coffee’s fruity aroma and taste. 
  3. Each day, the cherry juice is extracted and stored. 
  4. After 72 hours of fermentation, the cherries are depulped and left in a tub tank for three days. 
  5. The mass is then sun-dried on beds for 2-3 weeks until the moisture content reaches below 11%. 
  6. Finally, the coffee is stored in Grain Pro bags with parchment for a minimum of two weeks before milling and exportation.
