PRODUCT PROFILE

THE EXPERIENCE:

Indulge in the rich flavors of Colombian coffee, where the enticing aroma of red fruits, brown spices, and chocolate beckons. This brew delights with a harmonious blend of citric acidity, featuring notes of lemon and lime, intertwined with hints of pepper and vanilla, all complementing a well-balanced cup with a medium body and a sweet aftertaste reminiscent of brown sugar.

THE CHALLENGE:

To create a distinct and unique coffee profile suitable for blending with other Colombian coffees or as a single origin, emphasizing fruity notes, a creamy body, and a sweet aftertaste. Ideal for espresso preparation with a medium roast preference.

PROCESS:

  1. After harvesting, the cherries are floated to select only the densest cherries, also serving to eliminate any fruit bacteria. 
  2. All cherries are hand-selected, with approximately 90% being ripe and 10% overripe.
  3. The cherries are then placed in a tank to initiate aerobic fermentation and the acetic process, imparting the coffee with its fruity aroma and taste. 
  4. After 12 hours of fermentation, the cherries are sealed in fermenters (beer fermenters in sanitary 2B finished stainless steel) with hermetic closures and a gas valve to control the anaerobic process for one week. 
  5. The cherries are spread on sunbed dryers for 5-6 weeks until the moisture content of the beans is below 11%.
